Day 3

Favorite Thing Day 3
Baking. I love to Bake! I've always dreamt of owning my own bakery...I'm not sure I'm good enough to be a huge success at that, but I think it would be the world's greatest job. Cooking real food, meat-n-potatoes kinda stuff I can do but don't love, but to me there is nothing more relaxing or enjoyable than creating some delicious cake or pastry. I just need people to feed it all to...I have to limit my baking because if it sits around here all day Preston and I would resemble the Pillsbury Dough Family.
Here is one of my favorite treats to bake:

Orange Rolls

Dough

2 packages dry yeast

¼ cup warm water

3 eggs well beaten

1 cup room temperature milk

½ cup shortening or butter

½ sugar

2 tsp salt

4-5 cups flour

Filling

Rind of 2 oranges finely grated

½ cup sugar

½ cup butter(softened)

  1. Soften yeast in ¼ cup warm water. Add ¼ cup sugar. Let sit for 10min.
  2. Beat eggs VERY well
  3. Combine yeast mixture, eggs, warm milk, shortening (or butter), the rest of the sugar, and salt into very large bowl.
  4. Add flour a cup at a time until soft dough forms. (No longer sticky)
  5. Cover and let rise until double in size.
  6. Divide dough in half and roll out.
  7. Spread half of orange filling on each half and roll up cinnamon roll style
  8. Cut with dental floss and place in a greased 9x13 in pan.
  9. Let them rise a second time until doubled.
  10. Bake at 350 degrees for 12 to 15 min- until lightly browned

Filling

  1. Mix butter, sugar, and orange rind. Cool in refrigerator so it will stay in rolls easier

Frosting

8oZ cream cheese

4 Tbl. Butter softened

2 cup powdered sugar

1 tsp lemon juice

½ bag white chocolate chips

  1. Mix the first 4 ingredients
  2. Melt the white chocolate and combine the two. SPREAD ON ROLLS IMMEDIANTLY.
